Baked Salmon with Dill & Lemon

Salmon is by far our favourite fish variety and we enjoy it quite often here in Kuwait as it is available quite freely here! During our recent PolCzech Trip we had it many a times cooked in multiple styles & across cuisines. I felt like eating it again and bought a Salmon Fillet in the weekend along with fresh Dill. I searched for some recipes on the internet to make it in some new style!

I also made a Dill-Lemon-Onion flavoured thick yoghurt as an accompaniment to the Salmon and it came out pretty well too!

The recipes I used: Simple baked salmon with dill yoghurt and SALMON WITH GARLIC, LEMON, AND DILL

The Salmon Recipe:

Ingredients:

1 salmon fillet (I had a 440 grams fillet)
2 tsp salted butter
1 tsp olive oil
1 clove of garlic, minced
Salt and freshly cracked pepper as per taste
Fresh chopped dill
Lemon slices
Lemon Juice

Method:

1. Preheat the oven to 225 degrees C. Line a baking sheet with tin foil and coat it with oil.

2. Mix the butter, olive oil, lemon juice and garlic together then spread evenly over the top of the fish. Season with salt and pepper. Sprinkle freshly chopped dill all over followed by a layer of lemon slices. Place skin side down on the prepared baking sheet.

3. Place into the oven and bake for 10 minutes or until the salmon flakes easily with a fork. Remove from the oven and serve with additional slices of lemon if desired.

4. Serve with the yoghurt and toasted bread.

For the Yoghurt:

Ingredients:

250 grams yoghurt (I used the low fat version)
Fresh chopped Dill – 1/2 cup
Juice and Zest of 1 lemon
1 finely chopped onion
Salt and freshly cracked pepper as per taste

Method:

Whip the thick yoghurt with all the ingredients and serve chilled.
