Greek Couscous Salad with Chicken

I had multiples types of Couscous Salads during our recent PolCzech trip and wanted to try a version of my mine; found a wonderful recipe on the internet, made some minor changes to it and then made this dish. This is a light, flavourful, mildly spiced, colourful, quite filling and a very healthy meal. Do give it a shot folks!

This can be stored in the refrigerator in an airtight container for up to 1 week so you can make a large quantity too using the same proportions mentioned below.

The recipe I used: The Crepes of Wrath

Ingredients:

For the Chicken:

1 big size chicken breast
1 tablespoon red chilly powder
1 teaspoon cumin powder
1 teaspoon salt
1 teaspoon red pepper flakes
1/2 teaspoon ground black pepper
1 tbsp Olive Oil

For the Couscous:

2 cups reserved chicken broth
2 cups couscous
4 tablespoons olive oil
2 bell peppers, diced
1 cucumber, halved and sliced
1½ cups cherry tomatoes, halved
½ cup green & black olives
½ cup feta cheese, crumbled
½ teaspoon salt
1 teaspoon red pepper flakes
¼ teaspoon ground black pepper

Method:

1. First, prepare your chicken. Combine your spices and rub them all over the chicken and keep it covered for 15 minutes.

2. In a shallow pan, heat 1 tbsp of olive oil over medium-high heat and add in the chicken breasts. Cook on each side for 5 minutes, then cover with 1/2 cup and bring to a boil, then reduce to a simmer and cook the chicken for an additional 15 minutes. Once the chicken is cooked, remove it from the water, cool it and chop it.

3. Add 2 cups of water in the pan and prepare the chicken broth.

4. Add in the couscous, stir to combine, and remove the pot from the heat. Stir, cover, and allow to sit undisturbed for 10-15 minutes. Taste the couscous and if it’s not tender yet, add a tablespoon or two more water, stir, and cover for another 5 minutes. When the couscous is tender, drizzle with 4 tablespoons of olive oil and fluff lightly with a fork.

5. Fold in the bell peppers, cucumbers, tomatoes, chicken, olives, feta, salt, pepper flakes, and ground black pepper. Taste and add more spices or olive oil if needed.

6. Enjoy this light, flavourful and healthy meal.
