Grilled Eggplant rolled with Cottage Cheese

Food is one of the most important target during all our trips and my wife (just like my mother!) loves Eggplant/Aubergine/Baingan a lot and orders them each time she finds them on the menu!

This has happened each time during our Europe Trips, be it in Cyprus, Czech Republic or most recently in Greece where she loved it the most! I was determined to try it out at home once we get back. And then Pratichi Dixit Sadangi (a fellow Sikandalous & Eatlo member) posted a similar recipe on Instagram and I needed no more inspiration! Gracefully she shared her recipe, I searched for some more on the internet and made this recipe specially for my wife!

This was the first time I didn’t eat the dish I prepared (History was made) as how much I try, I just cannot love the flavour of this humble vegetable (except in the case of the evergreen Baingan ka Bharta). Thankfully my life loved it and was mighty satisfied! My effort had paid off and that made me very happy indeed.

So if you are a Baingan fan too, then do give this easy recipe a shot!

Ingredients:

1 large eggplant
1 cup cottage cheese (I used the box version)
1 finely chopped medium sized onion
2 tbsp Sundried Tomato paste
1 tbsp olive oil
3 cup grated cheddar cheese
1 tsp red pepper flakes
1 tbsp dry basil
1 tsp black pepper powder
Salt as per taste

Method:

1. Thinly slice the eggplant (down the length of the eggplant, so you get the longest pieces possible), and rub the pieces with salt. Place the eggplant in a colander and let it drain for one hour. This process is called purging and it is done to let the salt draw out any juices carrying the bitter flavor.

2. While the eggplant drains, mix all the other ingredients.

3. After the eggplant has been purged, rinse the slices well, then dry with paper towels. Preheat the oven and grill the eggplant slices about 3 minutes on each side (depending on thickness).

4. Place a small spoonful of the cheese mixture at the base of the eggplant, then roll it up.
