I am always on a lookout for new recipes and keep trying them in our kitchen these days quite frequently. And while looking for a Grilled Lamb recipe came across this easy and seemingly delicious recipe named Mint Sambol.
I have never tried a Sri Lankan recipe before so this was quite a decent start for me. I found this recipe on the Give me Flour website operated by a lady named Amanda Areias. She had adapted this recipe from the book Sri Lankan Flavors by Channa Dassanayaka.
I found this recipe very interesting because of a strange set of ingredients coming together – Fresh Mint, Raisins and Coconut. Plus more importantly I love all these 3 ingredients so I had to give this a shot!
The end result was so damn delicious that I have decided to explore Sri Lankan cuisine further. This chutney can be used as a perfect accompaniment to almost everything; a simple dal-chawal meal, grilled meats and also in sandwiches. It is tangy, spicy, very easy to make and very flavourful. Mint Leaves: 1 cup (tightly packed)
Onion: 1 medium size
Garlic: 4 cloves
Coconut: 2/3 Cup, freshly grated
Raisins: 1/4 cup
Green Chilli: 2, sliced
Black pepper: 1 tsp, freshly ground
Lemon Juice: Of 1 lemon
Salt: 1.5 tsp
1. Collect all the ingredients and blitz in a food processor until they are completely ground.
2. Adjust the seasoning and enjoy!
